WHS Culinary Arts students introduce the

Hospitality and Tourism program to Weatherford

February 24, 2012: Students from theWeatherford High School culinary arts classes prepared lunch for WISD school board members and other special guests. Culinary Arts is a year long course that introduces the fundamentals of basic food safety, sanitation, preparation and foodservice management. Culinary students run their on-campus restaurant, La Roo, for WHS staff and participate in catering events performed by the culinary department.

The Career Technology Department recently announced that it will be implementing the Texas ProStart program during the 2012-2013 school year. Texas ProStart is a two-year high school restaurant and foodservice management curriculum that blends classroom learning with mentored work experience. The Texas ProStart curriculum was developed with guidance from educators and representatives of the restaurant and foodservice industry and is managed nationally by National Restaurant Association Solutions and the Texas Restaurant Association Education Foundation. The program is currently being implemented by more than 1,600 schools in 47 states, territories and districts, with approximately 60,000 students enrolled nationwide.

Foodservice is one of the nation’s fastest-growing industries, currently employing 12.8 million workers. The industry is expected to add 2 million jobs over the next decade, with 47,000 of those positions in management.   “There is a wealth of diverse opportunities for young people in the restaurant and foodservice industry,” said Amanda Burlison, Instructor,WeatherfordHigh School. “The Texas ProStart program will help us prepare students for those opportunities and establish a foundation for further learning whether the students immediately pursue foodservice careers or go on to hospitality management or culinary programs at the college level.”

The Texas ProStart program gives junior and senior high school students the chance to explore career opportunities and gain the skills needed to operate and manage a foodservice operation by pairing classroom learning with on-the-job experience. As part of the Texas ProStart program,WeatherfordHigh School will combine academic classroom work with the opportunity for students to participate in mentored work experiences at local restaurants. During the mentored work experience, students get hands-on experience in different areas of the foodservice industry.

They work directly with industry professionals who serve as mentors to make sure the students are getting as much as possible out of the work experience and have the chance to practice what they learn in the classroom. “We are currently seeking community industry partners,” Burlison reported. We believe our students will be able to get a realistic view of the industry and explore the many career opportunities open to them in a real life setting.”

When students meet academic standards, complete a checklist of competencies, and participate in at least 400 hours of a mentored work experience, they are awarded the ProStart National Certificate of Achievement that signifies they are well qualified to enter the industry workforce.

Students who achieve the National Certificate of Achievement have access to scholarships and articulation agreements with leading colleges and universities.

Mrs. Burlison, the Hospitality and Tourism instructor, graduated from the Coordinated Program in Dietetics at Texas Christian University. Burlison is a registered dietitian and certified personal trainer. Her culinary background has been focused in catering, event planning, and private dining. Other courses in the Hospitality and Tourism program are Restaurant Management, Practicum in Culinary Arts and Food Science. The Hospitality and Tourism Program can be followed on their website www.epsilen.com/aburlisoor http://www.facebook.com/WeatherfordHighSchoolCulinaryArts.

Weatherford FFA Outstanding Awards

Ali Cantrell $8,000 WInner                         Brooke Chillcut $20,000 WInner

For the first time in many, many years Weatherford students have won one of the most Outstanding Awards an Ag student can win in the state of Texas. Weatherford FFA students traveled to the San Antonio Livestock Exposition during February and the students did not come back empty handed!

Freshman Brooke Chillcut brought home a large amount of scholarship money this year! Her first win of the weekend was with her Hampshire ewe that won Reserve Champion of its breed. Next up in the show was her Dorset ewe. Brooke lives by the motto that, “You get out of it what you put into it,” and it has paid off! Brooke won Grand Champion of the Dorset Breed, giving her yet another piece of the scholarship prizes from San Antonio Livestock Show.

Haley Farmer had one of the top thirteen market sheep in her class with her Southdown lamb.

Ali Cantrell exhibited her Red Angus heifer that was purchased with a calf scramble certificate (provided by very generous donors) she had won the year before. Ali maintained meticulous records as she cared for the heifer  and attended shows. Cantrell submitted her record book for judging. The She was required to show at the 2012 show and attend the banquet for calf scramble participants where they get the record books back. Cantrell could not find her book amongst the others at the table, so she was very nervous that it might have been lost. “I was just praying they had my record book somewhere! They called out third place, then second place.....and it was my name, “recalls Cantrell, “It was very exciting and a great pay-off for the hard work I had put in this year. Even though my scramble project is now complete, I intend to keep in contact with my scramble donors, The Robertson Brothers, during my college career at Texas A&M.”

Livestock Show

The junior livestock program is a unique opportunity to use live animals to help youth develop. The experience of youth owning and working with animals, being responsible for their care, health, and growth, and exhibiting them in a competitive environment is a tremendous character building process. Junior livestock projects help develop life skills such as leadership, communication, decision making and problem solving skills. Character building, record keeping and the development of personal responsibility are other skills youth can develop as a result of their involvement in the broad range of programs in junior livestock.

Congratulations to WHS Senior Kolby Trammel and Sophomore Austyn Grabowski who exhibited beef cattle during the 2012 Ft. Worth Livestock Show in early February. One of the many missions of the legendary Fort Worth Stock Show & Rodeo is to promote continuing improvement in the breeding, raising and marketing of livestock and to encourage the pursuit of excellence generally throughout the livestock and agriculture industries.Trammell placed seventh in her class with a large black steer which secured her a spot in the premium auction.   Submitted by Amber Jennings, Agriculture Science Teacher & FFA Advisor

WHS Health Occupation Students Training in High School

Weatherford High School seniors Dillon Knighton (left) and Wes Stanley have big plans for their future.  They are training for their emergency medical tech license while going to school full time.

Knighton and Stanley are also enrolled in Weatherford’s Career and Technologies Health Science class, which offers several training opportunities for students to train in a specific career path. They will be able to find employment in the medical field when they graduate from high school.

Also, both students will pursue further education with Weatherford College in the paramedic program.

“It is amazing that we have EMT-B’s walking around our school during the day," Weatherford High School HST instructor Patricia Hoffman said. "Their training is intensive, plus these boys work outside of school while also carrying a full load at school. They are model students, and real-life heroes in life and death medical situations. I could not be more proud of the two of them."

North Texas High School Cupcake Battle
